Vanilla Bean Coconut Cupcakes - Cupcake Hero

When I decided to start a blog about baking and cooking in general, I thought it would be a fun way to share my culinary gifts with the blog world. A way to entertain and challenge myself. Then I realized, I'm already challenged enough. I'm a full time employee, wife and mother of two busy little girls. I was very into my little blog here and then what happened?  I BECAME A GIRL SCOUT LEADER!!  I didn't really have time to blog. But, I still had time to read everyone else's blog posts. So I said to myself, if you can read other's posts while not continue with your own blog. And even though I don't have many followers, I'm happy with my little blog even if I am talking to myself. This little blog is important to me, its like my very own personal food journal.  It's another way for me to keep my mind fresh and enjoy myself. As I type this I'm drinking a chai latte and eating half of a plain poppy seed bagel. I feel good. 

But here's another thing, I'm daring myself a bit more. I entering Cupcake Hero for the first time. Apparently this is a baking contest started by I heart CuppyCakes and other's have begun to co-host with her, in order to keep it going strong. I've never ever joined a baking or cooking contest before. But why not?
The theme ingredient for July is Coconut, which I love in all forms.  Did you know that Coconut water is now all the rage? Go figure. I've been drinking coconut water since I was a wee bit child. 

The post before this one has the recipe I used to make my Vanilla Bean Coconut Cupcakes and the frosting I used.  I garnished the cupcakes with white chocolate swirls because I wanted to and because my family hates coconut flakes if truth be told. I hope I win but if I don't, I'll just try again next month. I'll only get better if not wiser.  http://smalltownoven.wordpress.com/

  2. I love coconut water, too and have been drinking it since I was young. But I think I've had more exposure to it being asian. Anyway, I'm glad you're continuing to blog and read other blogs and welcome to Cupcake Hero! I've been too busy to participate every month but it's a great group of bakers who always make me feel welcome when I can join in. Going to the other post to check out the recipe for these delicious cupcakes now.
